乙基麦芽酚
乙基麦芽酚(Ethyl maltol)化学式C7H8O3,主要用作增香剂。乙基麦芽酚是白色固体,有类似焦糖的气味。它可由糠醛和乙基溴化镁在 0~10°C的乙醚中反应,之后在5~10 °C进行后处理得到。[1]以糠醛和乙醛为原料也能得到产物。[2]
