辣芥末醬

辣芥末醬，也稱辣芥末、辣芥醬或辣芥是一種芥末醬，在中國、韓國·朝鮮、日本食用。它在英語中被稱為“Asian/Chinese/Oriental hot mustard”。

歷史

在《禮記》、《儀禮》等中國古代文件中被稱為介醬。[1] 在《本草綱目》中提到“子大如蘇子，而色紫味辛，研末泡過為芥醬，以侑肉食，辛香可愛。”，這與今天的作法相同。[1]
